Every recipe here is similar yet different. There's a method to coffee, but no single right answer. The goal is to accumulate experience and find what tastes best to you.
1) Pour Over — 15g
Pour over means "pouring water through" — a drip method popular in Western countries that's easy to execute without elaborate hand technique. That said, for expressive and nuanced flavors, the quality of your grinder becomes increasingly important.

Recipe: Coffee:Water = 1:15 / Grind — one step past the AeroPress label on Wilfa / Water temp 93°C / Brew time 2:10–2:30
Method:
- Fold the filter
- Rinse dripper and server with hot water
- Add coffee and level the bed
- Press TARE on your scale
- Pour 50ml of water and stir (wait 30–50 seconds)
- Pour up to 220ml and stir with a spoon 2–3 times
- Finish between 2:10 and 2:30

2) 50g Bypass Recipe — Multiple Servings
A practical method for brewing several cups at once. Bypass means brewing a concentrated extract and diluting it with water at the end. Produces consistent results even for beginners.

Recipe: Coffee:Water = 1:10 + 200g water added at end (adjust to taste) / Grind — second mark on Wilfa AeroPress setting / Water temp 93°C / Brew time under 5 minutes
Method:
- Fold the filter
- Rinse dripper and server with hot water
- Add coffee and level the bed
- Press TARE on your scale
- Pour 100ml of water and stir (wait 30–50 seconds)
- Pour up to 300ml and wait until 2:10–2:40
- Pour up to 500ml and wait for it to drain completely
- Remove filter, then add 200ml of water to bypass
Advantage: Eliminates the astringent finish from late extraction, and leverages the natural sweetness of fresh water.
3) Single-Serve Iced Coffee — 15g
Recipe: Coffee:Water = 1:8 + 100g cold water added at end (adjust to taste) / Grind — second mark on Wilfa AeroPress setting / Water temp 89°C / Brew time under 5 minutes
Method:
- Fold the filter
- Rinse dripper with hot water (fill the server with ice)
- Add coffee and level the bed
- Press TARE on your scale
- Pour 50ml of water for bloom (wait 30–50 seconds)
- Pour up to 90ml and wait until 1:20
- Pour up to 120ml and wait for it to drain (around 2:10)
- Remove filter, add 100ml of cold water, and swirl the server

4) AeroPress Recipe
When carrying a full drip setup isn't practical, the AeroPress lets you brew excellent coffee with minimal gear.

Recipe: Coffee:Water = 1:12 / Grind — between first and second mark on Wilfa AeroPress setting / Water temp 80°C (hot water from a standard water dispenser) / Brew time 2:10
Method:
- Prepare 20g of coffee
- Grind and add to the AeroPress
- Pour hot water just until the grounds are submerged
- Shake the AeroPress gently
- Wait 40 seconds
- Pour hot water up to the top of the AeroPress
- Lock the cap and shake again
- Wait until 1:50, then press for 20 seconds

World Brewers Cup Champion. Divides the pour into 40% (controls flavor) and 60% (controls strength) — a method designed so anyone can make excellent coffee.
